Roast ’em or freeze ’em

Roasted “Ontario” Red Sheppard Peppers……freezing from fresh is also another great option!

This past Sunday was my day in the kitchen to savour the flavour of autumn’s best for the long winter months ahead. There is nothing more satisfying than going to the pantry and or the freezer and having locally grown produce at my fingertips!

Oven roasting is a tasty way to to prepare peppers before the canning process. Just clean, remove the seeds, season, add a little sunflower oil and roast. Finishing them off with a slice of fresh “Ontario” garlic and touch of not so local a sugar, some sea salt, and vinegar is so easy.

Freezing from fresh is even easier! Clean, remove the insides, slice and place in a freezer bag until your ready to use them. How easy is that?

A perfect addition to your favorite winter soups,  pastas, lasagnas, sandwiches  and stews.

I have to say doing these things is not about the money I saved in the process (although I always do). I enjoy preserving whole foods for my family when winter sets in. We are at the peak of harvest season here in Ontario as  many of you are across Canada and the United States. In a month or so all of that will be gone until the spring.

My family enjoys tasting the food they they eat and all too often the imported produce is either tasteless or tastes like something it is not.  Simply eat more whole plant based foods… locally produced!
